Double major, or major / minor?

I have a college diploma in General Studies (Applied Science), with a concentration in environmental science, plus a butt-load of credits that never went into an accredidation. I don't work in a related field. I made some great life-long friends in college, but I definately wasn't focused enough for post-secondary and I occasionally think of going back to pursue a degree in either of the areas SFrank85 mentions above. If I won the lottery, I'd think about going to law school
